The Guida Bio assigned 3 Certificati di Eccellenza 2023 to  Cantina LaSelva‘s Morellino 2021, Morellino Riserva Colli dell’Uccellina 2019 and Rosso Toscano 2021.

Harmonic, elegant wine characterised by notes of red berries and spices. Intense, enveloping structure like Maremma.

Grape variety
90% Sangiovese, 10% Merlot

Flavour and aroma
Ruby red. Elegant and spicy with fresh notes of red berries. In the mouth it is soft, persistent and fresh at the finish.

Pairings
Pasta dishes with red sauces and meat sauce, red meat, spicy dishes, eggs. 

Vinification
The grapes from our best vineyards registered as Morellino DOCG are processed in a very traditional manner: the bunches are destemmed, pressed and fermented in steel tanks for two weeks at a controlled temperature of 26°C. Ageing for 3 months in steel tanks, after blending the wine continues its refinement for another 3 months in steel tanks and at least one month in the bottle.

This Morellino di Scansano, one of our region’s most extraordinary wines, comes from our vineyard in Uccellina Park.  An elegant, compact and full-bodied wine with pleasantly fruity and spicy notes.

 

Grape variety
85% Sangiovese, 15% Merlot

Flavour and aroma
Ruby red. Fresh notes of red fruits and blackcurrant, finished with complex spice. The palate has a nice articulation from which emerges a lively fruitiness, pleasant tannins and balanced acidity. Good persistence.

Pairings
Game, red meat, aged cheeses.

Vinification
The grapes are harvested when they achieve optimal ripeness and vinified separately in small stainless steel tanks at a controlled temperature. When fermentation is completed, the Sangiovese is left in contact with the skins for another 10 days, while the Merlot is placed directly into new French oak barriques. At the end of maceration, the Sangiovese is put into French oak tonneuax for 12 months. During maturation the wines are racked twice and combined only shortly before bottling.

A sulphite-free wine that’s the fruit of our passion, which expresses the purity of Maremma and the boldness of our philosophy. Strong, complex structure with a persistent, spicy finish.

Flavour and aroma
It is a wine where the fresh, fruity aspect of the grapes prevails, with good body and pleasant persistence. The nose has hints of blackberry, cherry and red berries.

Pairings
Pasta dishes with red sauces and meat sauce, red meat, spicy dishes, eggs.

Vinification
After careful sorting, the grapes are destemmed, crushed and left to ferment for about ten days in small steel tanks at a controlled temperature. Once fermentation is complete, the wine is decanted and left to rest until malolactic conversion is completed. It is then decanted once more and left to rest in the tank until bottling.During each stage of processing the wine is protected from contact with the air and no sulphites or other antioxidants are added.
