Soil: Clayey schists and sandstone
Grapes: 70% Sangiovese, 20% Canaiolo Nero, 10% Uva Francesca (Cabernet)
Pruning system: Guyot
Winemaking: Maceration with the skins for 20-25 days with temperature control (délestage and pumping over of the must). Malolactic fermentation. Two years in wood. The first year in French oak tonneaux (capacity 3.5 and 5 hectolitres) and the second year in Slavonian oak casks (capacity 25 hectolitres).
Finishing in the bottle for 1 year.

Grape: Nero d’Avola 100% manual harvest
Winemaking: Destalking, maceration and fermentation through indigenous yeasts in stainless vats for 20 days at 24°C, racking, refining 12 months in casks and 6 months in bottle.
Colour
Intense ruby red colour.
Smell
Characterised by complex and intriguing aroma: ripe black fruit, liquorice, spices, tobacco.
Taste
Smooth, round, lingering, with a typical acidity which makes it dynamic and sapid. Aftertaste with coffee and chocolate hints, typical of this noble variety, symbol of Sicilian wine world.

Syrah Sicilia

Grape: Syrah 100% manual harvest
Winemaking: Destalking, maceration and fermentation through indigenous yeasts in stainless vats for 14 days at 24°C, racking, short refining in concrete vats and in bottle.
Colour
Intense ruby red colour with purple gradation.
Smell
Intense aroma of ripe red fruit, menthol, sweet spices which give it complexity.
Taste
The taste opens slowly, velvet, round, rich and well-balanced. It’s a wine sapid, bodied and pleasant to drink as well.
